Caryophyllene is the only cannabis terpene with a four-carbon ring in its structure, which sets it apart chemically from all the others. It smells of black pepper and clove, with a dry woody note underneath. The same molecule is responsible for the bite of black pepper and is present in clove and rosemary. It boils at around 130 °C — noticeably lower than myrcene or limonene — so in peppery cultivars the gap between careful and careless drying is the most audible. In profiles it most often comes second, adding sharpness to a citrus or sweet base.
